If you hold down the knob when it powers on you will get a new random MIDI channel. The note that is sent will be new as well.
To program One Knob to use whatever MIDI channel and Control Change number you want. Send a Control Change on any MIDI channel while holding down the knob after powering on. This will be saved as the new Control Change number and MIDI channel. This has to be done over USB.
